Yummy Vegan Dinner Rolls
2 ¼ cups flour, or whole wheat flour
2 tablespoons sugar
1 teaspoon salt
¼ ounce (one package) yeast
1 cup warm water
2 tablespoons Promise Buttery Spread
½ cup silk tofu, pureed
Preheat oven to 400 degrees. Mix 1 ¼ cup of flour with sugar, yeast, and salt in a mixing bowl. Add the water, the Promise Buttery Spread, and the tofu, beating until smooth. Stir in remaining cup of flour. Cover and allow to rise for about an hour or so. Spray the inside of muffin tins with fat-free spray (or use a mister to mist olive oil into the cups). Allow the batter another 30 minutes to rise within the cups. Bake for twenty minutes or until golden brown. This recipe makes a dozen rolls, but you can easily double it or even triple it for larger crowds.
These are perfect for a holiday celebration or special dinner, or just anytime that you want a yummy dinner roll without the added calories. Remember, instead of butter, opt for Promise Buttery Spread or olive oil as a delicious topping!

Vegan doesn't really mean healthy, especially if you're using white flour! That's what I don't like about WW and why I'll never do it. They may be 2 points but I wouldn't want to eat them regularly. I'll stick with whole grains.

Thanks for the comment on my blog! I just posted part 2, so I can't wait to hear what your thoughts are! I believe the Health benefits (those that live longer,healthier etc) attributed to Soy, are only FERMENTED soy products. These are different from Soy, and offer so many amazing health benefits! Asian cultures primarily eat fermented products (miso, tempeh, soy sauce, kimchi, natto etc). Have an amazing holiday and thanks for the great recipe!
