Low Calorie Fettuccine Alfredo

low calorie and low fat fettuccine alfredoHello and Happy 2009! After blogging last week about Quinoa Supergrain Pasta, today I am excited to write about a delicious low calorie alfredo recipe that you can make with your pasta of choice in order to create your own Low Calorie Fettuccine Alfredo.



Low Calorie Fettuccine Alfredo Recipe (makes 4 servings)
(adapted from full-fat recipe on Quinoa Pasta box)

Ingredients:
- 1 box (or 4 servings) of fettuccine or linguine noodles (I most recently used the quinoa supergrain pasta, but you can also use wildwood pasta slim, whole wheat pasta, or your own noodle of choice)
- 1/4 cup of Promise Light
- 3/4 cup Low Fat Sour Cream
- 1/2 cup grated low fat or fat free cheese of your choice (I use Lifetime Fat Free Mozzarella to save calories, but parmesan cheese probably tastes most authentic)
- chopped parsley to taste (1-3 tablespoons)
- pepper to taste

Cooking Instructions:
- Prepare your pasta based on package instructions
- In a separate saucepan, melt your butter
- Once your buttery spread is melted, remove it from the burner
- Stir in the low fat sour cream, until the sour cream and butter are thoroughly mixed
- Add the fat free cheese or parmesan and combine
- Pour the sauce over the pasta and stir to combine
- Sprinkle parsley and pepper over pasta to taste
- Divide into four servings

The calories and weight watchers points for the complete recipe depend on what noodles you use. The sauce itself using fat free cheese and low fat sour cream comes out to 130 calories and 8 grams of fat, so 3 weight watchers points. If you'd like to make a lower fat version, you can always substitute fat free sour cream instead of low fat sour cream, or use a tablespoon less of butter.

If you combine the low calorie alfredo sauce with the quinoa pasta, you end up with a 335 calorie meal, or 6 weight watchers points. If you combine it instead with the wildwood noodles, the meal will be 180 calories (4 weight watchers points), and it will be 320 calories (or 6 weight watchers points) with the whole wheat noodles.

Mmm, this sounds delish! I, too, make a low-fat fettuccine alfredo using non-fat plain yogurt and a bit of either non-fat half and half or light cream for the sauce. Even my husband, who adores the real stuff, loves my version.

this is the least calories i've EVER seen in an alfredo dish. this looks and sounds delicious. the servings of pasta are always overflowing at restaurants i've noticed. my sister and i would always split this dish because it was impossible to eat it all.

Mmm sounds great. I really like Laughing Cow light cheese in pasta dishes too. And jalapeno cheese is fantastic because you only need a bit because its so deliciously spicy!
